Demonstration Class
Wild game deserves more than a heavy hand and a hot skillet. Join us for Field, Fire & Fork, an elevated Southern cooking experience built around the art of preparing game with intention, from proper technique and temperature to seasoning, searing, and serving.
We'll begin class with a beautiful Southern Orchard Salad. From there, we'll explore three distinctly different wild game preparations. Our Sous Vide Elk Roast, Pan Seared Duck Breast and Glazed & Bacon Wrapped Quail. Showcasing different techniques for bringing out the best in each cut without overpowering the natural flavors of the game. The meal will be rounded out with creamy Smoked Gouda Grits and Fire Roasted Rainbow Carrots. To finish, we'll enjoy a warm Cane Syrup Apple Crisp, bringing a touch of Southern sweetness to the evening.
Throughout the class, you'll learn how to confidently prepare wild game, including the importance of temperature, timing, seasoning, and finishing techniques. Whether you grew up eating from the field or you're trying wild game for the first time, this is an opportunity to experience Southern cooking with a little wild in it.
